Bolognese and Zoodles

Now that I live alone, I make meal prep bowls a priority once a week. That gives me several days without cooking, with days in between to add some variety. This dish is great during the summer whrn the garden is plentiful.

While the sausage and veggies sautéed, I used my spiralizer to make the Zoodles.

The Zoodles went straight in the bowls and will cook when I heat the meal for a few minutes in the microwave. I made four meals and used the remains to have for dinner last night ... easy peasy.

Bolognese with Zoodles

Ingredients:

1Tablespoon olive oil

1 package Chicken Italian Sausage (I used chicken/kale Italian)

1 red bell pepper, chopped

1package sliced baby Portobello mushrooms

1jar  marinara sauce

Salt and pepper to taste

4 zucchini

3-4 Tablespoons freshly grated Parmesan cheese.

Instructions:

  1. Remove sausage skins and sauté in olive oil, breaking into pieces as it cooks.

2. add the chopped peppers and sliced mushrooms when the sausage is almost cooked.

3. Sauté until tender.

4. Add sauce and simmer to heat.

5. Using a spiralizer, make the Zoodles ... about 2 cups per serving.

6. Top the Zoodles with 3/4 cup sauce and grated Parmesan cheese.

7. Cover and store in the refrigerator.

8. Vent bowl and heat in microwave for 2-3 minutes. Enjoy!
