Bordelaise Sauce

This is the meal my mother served for Christmas dinner.

My mother served filet of beef with Bordelaise Sauce for Christmas dinner. I love the sauce, Iā€™m not a fan of rare meat though.

Bordelaise Sauce

Saute:

1 shallot, minced

1onion slice

2 carrot slices

sprig parsley

6 pepper corns

1 whole clove

1/2 bay leaf

Add:

2T flour

1 can condensed bouillon

can be done to this point 1 day before

15 minutes before serving add:

1/4 t salt

1/8t pepper

1/4 C red wine

1T snipped parsley

Strain and serve
