French Onion Soup
French Onion Soup a la Instant Pot
Ingredients
8 large yellow onions, Make sure to use YELLOW ONIONS, peeled, sliced in thin half-moons
2 TBS olice oil
2TBS butter
1 1/2 TBS sugar
1 1/2 TBS salt
3 cans Campbell’s Double Strength Beef Broth
32 oz. chicken broth
1/2 cup Marsala
1 dried bay leaf
3 sprigs thyme, tied with kitchen twine
1tsp pepper
1 baguette, cut into 1 inch cubes and toasted
1/2 shredded Gruyere cheese for EACH serving
Instructions
Heat butter and oil in a large skillet
Add onions, salt, and sugar
Sauté the onions until golden and caramelized. This step can be done in advance.
Combine beef broth, chicken stick, wine, bay leaf, thyme and onions in Instant Pot.
Cook on pressure setting for 20 minutes. After the time is done, release pressure naturally for 15 minutes, then release the remaining pressure by opening the vent.
Before serving, top the serving bowl with a slice of baguette and plenty of Gruyere cheese. Place in the oven for a few minutes to broil. Broil until cheese is melted, and has a golden brown color.
