Fresh Tomato Sauce
My mother shared this ridiculously easy, fantastic sauce with me .... it was so good. Three fresh ingredients combined in less than five minutes, you can't beat that at the end of a busy day. I used the sauce over sautéed zucchini and onions... and some chicken ravioli that was in the freezer. It was a great fresh dinner in just a few minutes.
It's equally delicious with fresh pasta and shrimp.
We used two large homegrown tomatoes. Slice them in half, and grate the tomato halves into a bowl. You'll be left with the skin, and all the good stuff is in the bowl. Add some fresh basil, garlic, and sea salt to taste. Toss with pasta for a refreshing summer meal.
