Lasagna Soup

Lasagna Soup is our “go to” easy dinner during winter months. We’re all for Shrimp Orzo Salad in the warmer months, but this soup is cozzy comfort.

Lasagna Soup

Brown:
1 lb hot Italian sausage (I substitute chicken Italia sausage)
2 cups chopped onions
1 cup diced carrots
2 cups button mushrooms, sliced
2 tablespoons minced garlic

Stir in:
3 cups chicken broth
1 jar pasta sauce (I use Raos Marinara)
1 tablespoon basil
Bring to a boil

Add:
1 cup mafalda or campenelle pasta
Reduce heat, and cook until pasta is tender

Serve over:
1 cup diced fresh mozzarella (divided between 8 bowls)

Top with:
Grated fresh Parmesan cheese and fresh basil
