Pumpkin French Toast and Spicy Bacon
Pumpkin French Toast and Spicy Bacon make the perfect fall breakfast for a weekend morning. It smells so spicy good, you'll have company in the kitchen while it cooks. The key is using great pumpkin butter. The brand I used was thick and spicy which gave the French toast a rich flavor/
Pumpkin French Toast with Spicy Bacon (Serves 4)
Ingredients
For the French toast:
1 cup non-fat evaporated milk
5 Eggs
½ tsp salt
1 tsp pumpkin pie spice
1 tsp vanilla
6 Tbs pumpkin butter
6 croissants
For the bacon:
12 thick slices bacon
1/3 c maple syrup
3/4 tsp honey mustard
Preparing your French toast:
1. Whisk all of the ingredients well in a deep dish.
2. Cut the croissant lengthways and then dip both pieces into the batter, allowing the excess to drip back into the dish.
3. Melt butter in a frying pan on medium and add your croissants.
Cook until golden brown on both sides. (This should take about 2 minutes per side).
4. Serve with maple syrup or powdered sugar. Or both!
Preparing your bacon:
1. Preheat the oven to 400 F. Line a baking sheet with aluminum foil and place a rack on top. Lay the bacon slices on the rack.
2. Thoroughly mix the mustard and maple syrup. Brush one side of the bacon with the glaze and bake for about 12 minutes. Flip the bacon and brush with the rest of the glaze. Baking for about 10 more minutes, depending on the crispness desired.
